Raw grey prawns, translucent and blue-grey, with slender pink-tipped legs and long antennae. The bodies are cleanly segmented and firm to the touch, with the shells left on and the heads still attached.
Because they are raw rather than pre-cooked, they hold their texture all the way through cooking and pick up the flavours around them — the shells themselves add sweetness to a stock. Boil them for a few minutes until they turn pink, stir-fry with garlic and chilli, grill them in the shell, or peel and use them in dumplings and wontons.
