Small silverfish, slim and almost translucent, each one a pale ribbon with a thread of darker silver running its length. They arrive clean and separate, not frozen into a solid block.
Whitebait are eaten whole, so there is no cleaning and nothing to trim. The texture is soft and delicate and the flavour is mild and faintly sweet, which is why they work equally well in a light broth, folded through egg, dusted in flour and fried crisp, or scattered over a steaming bowl of rice.
