Sea snails in their leopard-spotted shells — irregular chestnut blotches scattered over a cream ground, each shell a compact spiral with a rounded whorl. They come already cooked and dressed in a light savoury marinade, glossy on the shell and ready to eat.
You get at the meat with a pin or a small fork: a firm, springy morsel with a clean marine sweetness and a faint chew, the texture that makes these snails a drinking-table favourite. Serve them cold as they are, or warm them briefly and finish with chilli, garlic and a squeeze of lime.
