Fresh-Frozen Mantis Shrimp
Fresh-Frozen Mantis Shrimp
Mantis shrimp in their armoured plating, banded in rust and cream, with the folded raptorial claws and stalked eyes that mark them out as something apart from a prawn. Split one open and you find firm white meat running the length of the tail and, in season, a thick band of deep orange roe along the back.
The meat is sweeter and more firmly set than prawn, and the roe is rich and faintly creamy. Steam them whole with ginger, salt and pepper them and fry until the shells crisp, or blanch and dress them cold. The shell is sharp — cut along the sides with scissors to open them.

- Best steamed, salt-and-pepper fried or blanched
- Cut along the shell sides with scissors to open
